How to make Menemen step by step:
Menemen is a typical Turkish breakfast recipe, it is a simple but nutritious recipe, thanks to the presence of eggs and peppers. With respect to onion there are those who believe that it must be incubated and those who consider it sacrilegious. Others simply replace it with a garlic clove.
This is how this Turkish omelette with peppers known as Menemen is prepared.
To more easily remove the skin of tomatoes, with a sharp knife, mark a cross at the base; immerse them for a minute in boiling water, and remove. The skin will detach itself.
Wash the peppers, which can be green, red or a mixture of both, remove the seeds and cut them into rings. If you have decided to include the onion, chop it finely. (Proceed in the same way if you want to use garlic).
Put the butter in a pan and light the fire. Sauté the peppers together with the onion and garlic for a couple of minutes (if used).
Then add the tomatoes and let cook over medium heat.
Meanwhile, beat the eggs with salt, pepper and chili. When the vegetables are cooked (about 5-10 minutes) pour the egg shake and stir with a wooden spoon.
Finish the menemen with a pinch of fresh parsley.
