Malfatti recipe
The malfatti are a variety of gnocchi, their name means ´mal fact´. So there are no excuses, to prepare this recipe easy and rich !!!!! They are a source of #fiber and #proteins of excellent quality.
✅INGREDIENTS:
Cooked spinach: 350 g.
Ricotta: 175 g.
Flour: 150 g
Nutmeg: 1 pinch.
Eggs: 1.
Grated cheese: 25 g.
Salt and pepper to taste.
Tomato sauce: to accompany.
✅ Cooking time: 6 minutes.
✅ Performance: 30 malfattis.
☑️Preparation:
In a bowl place the cooked spinach, very drained and well chopped. Add the drained ricotta without whey, flour, season with nutmeg, egg and grated cheese. Mix and season with salt and pepper.
Let the preparation stand for 2 hours in the refrigerator.
Make small walnut-sized muffins, put on a plate sprinkled with flour and set aside.
Cook the malfattis in small batches, in plenty of boiling salted water for 6 minutes (this is when they start to rise 😉).
Drain, place in a bowl and pour the tomato sauce or the one you like. They are also very rich baked gratins !!!
