Broa (Portuguese Cornbread)
Ingredients Broa recipe:
2 teaspoons dry yeast150 milliliters of warm milk
200 milliliters of water
200 gr of yellow cornmeal
300 gr of sifted strength flour
1 and 1/2 teaspoons salt
1 tablespoon olive oil

In a bowl we spread the yeast with the milk, let stand 5 minutes and stir with a wooden spoon. We add the water.In a large bowl, mix cornmeal, wheat flour and salt, make a hole in the center and pour the yeast liquid with olive oil.
Knead everything until it forms a firm and moist, but not sticky, dough that comes off the sides of the container.
Prepare the work surface with a little flour and pour the dough on it. Knead for 10 minutes until the dough is homogeneous and elastic.
We put the dough in a clean container and cover it with a dishcloth, let it ferment for an hour and a half until it doubles in size. degassing and let stand 10 more minutes.
We give the dough a round bread shape and place it on the baking board floured with cornmeal and cover it with a kitchen towel and let it ferment for an hour, until the bread doubles in size.
Sprinkle the bread with cornmeal, put it in the oven and cook for 35 minutes, until we see it take a golden color and sound hollow when we hit the base.
